With BBQ season at its peak, the evenings being warmer, and summer holidays nearly here. I thought I could bring you a summer BBQ recipe to try out.
We are a big fan of coconut oil and use it very often in our meals, I love the taste that it gives the meals and the fact that is it 100% organic too means it is good for you. I spotted the Vita Coco Coconut Oil competition on the Foodies 100 site, and set hubby the challenge of coming up with a BBQ recipe for you guys to try. He DOES love a challenge!
We love chicken on BBQ’s; the flavours you can add to it can be amazing and when you BBQ it really enhances the flavours and it seeps into the chicken. As a family we are trying to be more healthy, an part of this is to use less sugar and more natural products. So this recipe was perfect as it is all that, without sacrificing the flavours.
BBQ Mozzarella Chicken Parcels

There are 2 stages to this dinner, first the sauce and then the chicken parcels. However it is a really simple dinner, and pretty much pop everything in together!
Next up is making the chicken parcels, this keeps all the juices cooking inside the little parcels whilst on the BBQ.
We placed 1 tsp of the Vita Coco Coconut Oil on the foil, before layering up the chicken, vegetables, the BBQ sauce we made earlier, and then grating mozzarella cheese over the top.
Fold up and ready to place on the BBQ to cook and approximately 30 minutes, all done!
It was a really super yummy dinner, and the kids loved it, so that is a great success in itself!!
