  1. Place the Coconut Oil in saucepan to melt Add chopped onion and garlic Cook that until soft and translucent Add in remaining sauce ingredients Reduce the heat, and allow to simmer for 15 minutes

Place tsp of coconut oil on a sheet of foil Place chicken breast on top of coconut oil Spread chopped up veg around the chicken BBQ sauce over the chicken Sprinkle grated mozzarella over the chicken Fold up foil around the chicken to make a parcel Place on BBQ to cook, we used a gas BBQ and it took , so please adjust to your own BBQ, and make sure the chicken is fully cooked all the way through, with no pink inside.
