With the weather so rubbish at the moment I am craving warm and cosy food to eat. I’m sure I am not alone with this, so we thought we would put together a recipe for you. We love cooking in this house, hubby does the meals and I do the baking! 

Over the past year I have fallen out of love with baking though, I have found it a chore. My daughter loves cooking and so I found a recipe I really loved the sound of and started baking with her. I really loved it, enjoyed the time with her and of course the tasty end result! 

So I chatted about this to hubby and we have decided to bring you more recipes on the blog. We’re going to do them together, create videos and pictures. It won’t be fancy food, and it won’t be perfect but it will be family friendly recipes that have been tried and tested by my 3 kids too! 

Homemade Chicken and Chorizo Pie 

My kids love Chorizo and so do we. The moment you add this into anything you will instantly have a shot of flavour! 

Also we have also made the pastry for this too. If your scared like I was of making your own pastry then don’t be. This is so quick and easy to do, I didn’t even realise it was so easy to do until I saw my hubby making it for this! 

As this Chicken and Chorizo Pie is bulked out, you can easily make this pie with leftover chicken from the previous days roast as you don’t need to fill it right up with chicken. Also you could add in any veg with this, we have popped in some mushrooms, but you could add peas or carrots.

Ingredients

Instructions
Pastry
  1. Sift the flour into a large bowl.
  2. Add the butter and rub into the flower with your fingertips. Keep doing this until the mixture resembles fine breadcrumbs.
  3. Stir in the salt.
  4. Add 2-3 tablespoons of water and mix until you form a form dough. You can add more water if the mixture is to dry.
  5. Gently knead the dough for a short time on a floured surface.
  6. Wrap the dough in cling film and chill in the fridge while you make the filling.
Filling
  1. Dice the chicken and then fry in the oil under a medium heat until golden brown. Remove the chicken from the pan and set aside until later.
  2. Add the butter to the pan then saute the onion, chorizo and mushrooms until soft (around 5 minutes)
  3. When soft, add the flour and give a quick stir.
  4. Add the vegetable stock, stirring continuously, then add the milk so that the sauce is creamy and rich. If the sauce is to thick at this point then just add some more milk.
  5. Place the cooked chicken back into the pan and give everything a good stir and let it come to a simmer.
  6. Empty the contents into a large pie dish. If you would like a more traditional pie you can make extra pastry and line the pie dish with pastry before putting the filling in.
  7. Cover the pie dish and filling with the shortcrust pastry, make a couple of vents in the middle with a small knife and then brush the pastry with beaten egg.
  8. Bake the pie in the oven at around 200c/400f/gas mark 6 for about 20 minutes or until golden brown on top.

  2. My boyfriend would love me if I made him this. I’m a vegetarian so often we have replacement type meals using veggie chicken etc but nothing quite matches up with chorizo !

    • Yeah you could add what you wanted to this, different veggies or meat substitution.

    • There are pretty perfect pairing aren’t they! Mmm….what else can I make with them!!

    • Oh gone, sorry!!! Nothing last long in this house though so even if you can on the day of cooking you would struggle to get a slice! Thank you

    • Ah I was surprised how easy the pastry was to cook once I did it this way, I’m usually scared by pastry!!

  6. I love both Chicken and Chorizo, and have had them in Paellas, risottos, pasta bakes and on pizza. But I don’t think I’ve ever tried it in a pie before – I’ll have to give this a whirl x
