This months Center Parcs challenge with Tots100 is all about ice lollies.

Center Parcs ice cream enthusiast Deb Rogerson gave the tip of

‘Want to experiment with different flavours? Mix Greek yoghurt with a squeeze of honey, then just add your own additional flavouring. How about adding some crushed blackberries or blending banana in with the yoghurt? Transfer your mix to ice lolly moulds and set in the freezer.’

My kids love fruit and blueberries are one of their favorites, they are small and easy to eat, perfect for lunch boxes too.

So I wanted to make our ice lollies using blueberries.

I always thought to make ice cream you needed an ice cream maker and that they would be very involved.

Well not in this recipe they are not! JUST 3 ingredients!

Blueberry Ice Cream Lollies

400gย  blueberries

250gmascarpone

397g tin condensed milk

I pureed up the blueberries so they weren’t lumpy

Add the mascarpone and mix in well

Add the tin of condensed milk and mix in well

AND THAT IS IT!

I made up 3 lollies for the kids and poured the rest in an old ice cream tub

I left it over night to freeze

These blueberry ice cream lollies were so easy to make, you could use any fruit you wanted or any mixture of fruit. I will be making these again and many more flavours.

  1. This is great. I’ve not seen anything quite like it before, so healthy and fun, not too difficult either. Perfect for the Summer.
