Each week I try and make a batch of cakes for hubby and the kids to take to school and work. It is cheaper and I put some fruit of some sort in them too.
I have been making this recipe for the past few weeks and it is going down very well and it is so quick and easy!
Strawberry and chocolate muffins
I make a batch of 24 as they get eaten so quickly with 5 of us and do last well in a sealed container so adjust the quantities to what you require
- 250g Butter (I use stork marg)
- 300g Caster sugar
- Few drops of vanilla extract
- 2 Eggs
- 380g of Self raising flour
- 120mls of milk
- 400g of chopped up strawberries
- 100g of chocolate chips/chunks or small broken chocolate pieces
- Preheat the over to 190c (180c for fan oven) Gas mark 5
- Melt the butter and sugar together in a saucepan, just until it is melted so it doesn’t get too hot
- Remove from the heat and add the vanilla extract
- Add the eggs and quickly mix together
- Stir in the flour and milk
- Add the fruit and chocolate and stir in well
- Divide between the cake cases
- Cook for 15-20 mins, use a knife to poke into the middle and if it comes out clean then they are done
- Place on a wire cooling rack to cool down
You can use different fruit, I have done raspberry and fudge, banana, raisins and blueberries – let me know if you have any other suggestions you have tried!
